Jerk chicken,  festivals and spinach salad
Ingredients
Carnival Jamaican all purpose jerk sauce
Chicken peices
Flour
Oil
Nutmeg
Cinnamon
Vanilla
Salt
Sweet peppers
Cucumber
Tomatoes
Red onion
Spinach
CHICKEN PREPARATION
Wash four pieces of chicken thigh or drumsticks, marinate using  a table spoon of Carnival all purpose jerk sauce. For best result, leave overnight or place in the fridge for a few hours.
Empty container of the marinated chicken onto an oven tray, place in oven on gas mark 180, gradually lowering gage after 30mins. Total cooking time is 55min. Alternatively, you can cook your prepared chicken on a bbq.
FESTIVALS
fill 2 cups of self raising flour then pour into a medium sized bowl, ad half cup of cornmeal, tea spoon of nutmeg, cinnamon,  2 table spoon of brown sugar with a pinch of salt and a dash of vanilla essen.
Stir mixture together with water using  hand or mixer not too moist, but firm cutting dough into small shapes.
Pour a measure of oil into frying pan, alow to heat, then place shaped dough into pan, fry until golden brown for around 8 mins whilst turning them regularly.
SPINACH  SALAD
Cut sweet peppers into strips with red onion, tomato, cucumbers and spinach. Ad a little vinegar, olive oil and a pinch of salt.
SERVING
Place 2 festival on a plate along with chicken and a portion of salad.
Use Carnival all purpose sauce as a table condiment by scooping or as a dip. For a milder taste, you can ad a little honey mixing to satisfaction .
